Frisco’s first brewery opened in the fall of 2023, and you can find us working away in our cozy nanobrewery in the Ford Building at Main and 5th Street. David, our CFO and Head Brewer, and Mandy, our CEO and Recipe Wizard, are hands-on every day, ensuring the best experience for our community.

Our Story

Why Frisco?


Frisco has always been home to us. It’s where our story began—where we started dating, got engaged, married, and had our son here. Mandy moved here in 2004 for work, and David followed in 2006 after earning his MBA from SFASU. In 2007, David bought his first home in Frisco while we were dating, and we tied the knot here in June 2009, with a ceremony on a beach in Mexico just a few weeks later. Our son, Jackson, was born in 2011 at Baylor Frisco. After a brief move to Minneapolis in 2012 for career opportunities, we developed a love for craft beer and the tight-knit craft beer community. In 2013, we returned to Texas, settling in Pearland, before finally making our way back to Frisco in 2019.

Why a Brewery?


Even in college, when most of our friends were reaching for Bud Light or Miller Lite, we were already enjoying what was considered craft beer back in the '90s—Shiner Bock and Ziegenbock. Although Frisco didn’t have much of a craft beer scene at the time, we kept our passion alive with a monthly craft beer subscription, tasting brews from across the country.

When we moved to Minneapolis, our love for craft beer grew even more. As natives of Texas, outdoor winter activities weren’t our thing, so we spent weekends exploring breweries around the Twin Cities. Fulton Brewery became a favorite, with its welcoming atmosphere—long community tables, family-friendly games, and a sense of connection. That vibe inspired us, and during a game of Jenga and a few Imperial Stouts, we decided to start homebrewing when we returned to Texas.

In April 2014, we brewed our first beer, a 5-gallon batch using an extract kit on an electric stovetop in our corporate housing apartment. That beer, "Amber’s First Time," is still on tap today! From there, we were hooked—upgrading to all-grain brewing and making beer for friends, parties, and even our neighborhood craft beer group.

What’s Behind the Name Three Empires?


When we created our LLC in 2014, the names of our first three homes—Canterbury, Empire, and Cambridge—gave us the inspiration for the name which all lean into an empirical vibe. Additionally, David had humorously dubbed himself “The King of Frisco” after buying his first home, which he proudly referred to as his "castle." With three of us in our family, we decided we were building our own little empire, and Three Empires Brewing Co. just felt like the perfect fit.

 

The Importance of Family in Our Business


From the beginning, homebrewing was always a family affair. Our son Jackson, affectionately called “the hops and yeast guy,” probably knows more about brewing than most adults. Our close friends are like family, and we consider them a big part of our journey.

But our path wasn’t without challenges. In September 2023, Mandy was diagnosed with stage 2B breast cancer, just as we were navigating the planning and zoning process for the brewery. Despite undergoing 16 rounds of chemotherapy, a double mastectomy, and 28 rounds of radiation she fought to keep the dream alive. In February 2023, she even spoke at a Planning & Zoning meeting just after finishing her final round of chemo.

This brewery wouldn’t have been possible without the unwavering support of our family and friends. They helped us through the toughest times, offering both emotional and physical support as they pitched in to build out the brewery. Some of our friends became employees, and many of our regulars are now part of our extended family.

​

Family is everything to us. We love seeing families gather here. Each table has cards or games to enjoy, and every Thursday we host trivia night, followed by music bingo on Fridays. With Imagine Park right out our back door, families can bring their kids to play and burn off energy, while we provide picnic tables and outdoor games for everyone to enjoy. We want everyone to feel like part of our family when they visit.
